This is a baked cod recipe that's just plain yummy. Nothing fancy just good. Lots of butter, but you can use less or a butter substitute.
Even my 7yr old likes this recipe.
Ingredients
- 2 lbs Cod fillets
- 1-2 sticks of melted butter ( up to you )
- 1 lemon sliced very thinly
- salt and pepper to taste
- paprika
- Lemon pepper (opt)
- approx 3 tsp capers (i never measure)
- fresh flat leaf parsley, chopped
Directions
- Preheat oven to 375
- Lay cod fillets in a baking dish and pour melted butter over fish making sure it gets under the fish.
- sprinkle with salt, pepper and paprika
- Lay lemon slices over fish
- Then sprinkle with capers and parsley
- Cover with foil and bake for 10 mins
- remove foil and bake for 15 to 20 mins more till fish is cooked and flakes. (cooking time depends on size of you fillets)
