Buffet Cream Cheese Biscuits Recipe

I almost gave up trying to make biscuits until I tried making them with "soft" flour. Try using White Lily or Martha White brand flours in your biscuits and you'll be amazed at the results. These biscuits are good for a buffet since they will hold up and are more firm for spreading with a topping. This recipe makes a lot so there'll be enough (maybe).

Directions

  1. Soften cream cheese and butter or margarine to room temperature then cream together. Blend flour, baking powder (and salt) together. Then lightly blend into cream cheese butter mixture using your very clean hands and shape into 2" diameter rolls using waxed paper. Keep dough rolls wrapped in waxed paper then plastic wrap and refrigerate several hours or overnight. Slice into 1/2" slices and place on a ungreased cookie sheet. Cook in preheated 400 degree oven for about 10 minutes or until golden brown.
  2. Note: These don't turn out like regular biscuits but almost like shortcakes.
