Ingredients
- 2 (16 ounce.) cans yams
- 1 c. brown sugar
- 2 tbsp. cornstarch
- 1/2 teaspoon salt
- 1 c. orange juice
- 1/2 c. raisins
- 1/2 c. butter
- 6 tbsp. Brandy
- 1/4 c. nuts, minced
- 1 teaspoon orange peel
Directions
- Place yams in baking dish. Salt to taste. Combine sugar, salt, and cornstarch in saucepan. Blend in orange juice and raisins. Bring to a boil, stirring constantly. Add in butter, nuts, brandy, orange peel and bring to a boil. Pour over yams. Bake at 350 degrees for 45 min. Sauce will thicken while baking. Serves 8.
