Directions

  1. About 1 1/4 hrs before serving: Cook 6 large unpared, scrubbed sweet potatoes or possibly yams in boiling salted water to cover. Cook covered for 25 min or possibly till tender. Drain and cold.
  2. Meanwhile in 1 qt saucepan, mix 2 teaspoon cornstarch, 1/2 teaspoon nutmeg, 2 teaspoon salt, 1/2 c. granulated sugar. Gradually stir in 1 c. water. Cook mix at low heat while stirring, till clear sauce. Stir in 1 tbsp. lemon juice, 1/3 c. brandy, 1/4 teaspoon cinnamon.
  3. Start heating oven to 375 degrees. Peel potatoes, slice crosswise 1/2-1/4 inch thick. Into buttered pan pour on this sauce and bake covered for 30 min or possibly till glazed, basting occasionally. When glazed, sprinkle a few miniature marshmallows over potatoes. Broil just till golden brown. 8 servings.
