Ingredients

  • 1 1/4 c. sifted flour
  • 3/4 tsp salt
  • 2 tsp sugar
  • 3 tsp baking pwdr
  • 2 x egg yolks, well beaten
  • 1 3/4 c. lowfat milk
  • 1 c. post's bran flakes
  • 1 Tbsp. butter, melted
  • 2 x egg whites, stiffly beaten

Directions

  1. Sift flour once, measure, add in salt, sugar, and baking pwdr, and sift again.
  2. Combine egg yolks and lowfat milk. Add in to flour gradually, stirring only till smooth.
  3. Add in Post's Bran Flakes and butter.
  4. Mix in egg whites.
  5. Bakes on warm, well-greased griddle.
  6. Serve warm with Log Cabin Syrup.
  7. Makes 24 cakes.
