Ingredients

  • Bomboloni - Adapted from Food and Wine
  • 1/2 cup plus 1 tablespoon lukewarm water
  • 3 1/4 teaspoons active dry yeast
  • 1 1/2 tablespoons honey
  • 3 cups all-purpose flour, plus more for dusting
  • 3 tablespoons milk
  • 6 large egg yolks
  • 1/3 cup granulated sugar, plus more for rolling
  • 2 teaspoons salt
  • 3 tablespoons butter, softened
  • 3 cups canola oil, for frying
  • 3/4 cup seedless raspberry preserves or 3/4 cup lemon curd or 3/4 pastry cream (recipe below)
  • confectioners' sugar for dusting, optional
  • Vanilla pastry cream recipe follows
  • 1/2 cup sugar
  • 3 tablespoons cornstarch
  • 4 tablespoons cold unsalted butter, cut into 4 pieces
  • 1 1/2 teaspoons vanilla extract
