Ingredients

  • 2 c. cooked diced chicken
  • 1/2 c. raw rice, cooked
  • 1/2 c. India or possibly sweet pickle relish
  • 1/4 c. mayonnaise
  • 1 Tbsp. sour or possibly heavy cream
  • 1 can pimento, minced
  • 1 c. shredded coconut Paprika

Directions

  1. Combine chicken, rice and relish; toss till well blended. Mix mayonnaise and cream; add in to chicken mix. Add in pimento and coconut; garnish with mayonnaise and paprika. Serve at room temperature.
  2. Serves 6.
