Ingredients
- 1 lg. onion
- 1 tbsp. vegetable oil
- 1 (28 ounce.) can whole tomatoes
- 2/3 can picante sauce
- 1 1/2 teaspoon grnd cumin
- 1 teaspoon salt
- 1/2 teaspoon basil leaves
- 2 (16 ounce.) cans black beans
- 1 green pepper, cut into 3/4" pcs
- 1 red bell pepper, cut into 3/4" pcs
- 1 zucchini, cut into 1/2" chunks (2 c.)
Directions
- In large saucepan, cook onion in oil till tender. Add in tomatoes, picante sauce and seasonings. Cover and simmer 5 min. Stir in beans, peppers and zucchini. Cover and simmer till vegetables are tender, about 15 min.
