Ingredients

  • 1 pound black beans
  • 4 c. vegetable stock
  • 1 finely minced onion
  • 1 1/2 teaspoon grnd cumin
  • 2 teaspoon salt
  • 3 tbsp. red wine vinegar
  • 4 green onions, minced
  • 6 c. water
  • 1/4 c. extra virgin olive oil
  • 6 cloves garlic
  • 1 1/2 teaspoon grnd oregano
  • 1 1/2 c. cooked brown rice
  • 2 c. lowfat sour cream
  • Lime wedges

Directions

  1. Cook beans 45 min. Add in stock. Cover. Continue to cook about 1 hour. Heat oil in frying pan over medium heat. Add in onion, garlic, cumin and oregano. Cook till onion is soft. Set aside.
  2. In blender, mix 2 c. beans till smooth. Return to kettle. Stir in 2 tsp. salt, onion mix, rice and vinegar. Cook over medium heat till warm. Pass lowfat sour cream, green onions and lime wedges. Makes 14 c..
