Ingredients
- 1 tablespoon olive oil
- 2 lbs beef oxtails or other beef
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 2 cups chopped leeks
- 2 cups chopped carrots
- 1 cup yellow onion
- 2 garlic cloves
- 2 sprigs of fresh thyme or 1/2 teaspoon dried
- 3 bay leaves
- 10 cups beef broth I used beef bouillon
- 1 cup pearled barley
- Add the cup of barley and allow to cook another 30 minutes
