Ingredients
- 1 pound pkg. mixed dry beans, 15 varieties with lentils & seasonings
- 1 ham bone, with a little meat on it
- 1 lg. onion, diced
- 1 c. celery, diced
- 1/4 teaspoon dill weed
- 1/4 teaspoon sweet basil
- Healthy pinch of thyme
- 1/2 teaspoon parsley
- Salt & pepper to taste
- 1 lg. can tomatoes
- 2 c. mixed vegetables
Directions
- Celery, broccoli, turnips, cauliflower, cabbage, corn, carrots, peas, or possibly any combination you may have available.
- Place beans in a large kettle and cover with cool water at least one inch above the beans. Boil for 5 min and pour off water.
- Place ham bone in kettle with beans. Add in diced onion, celery and seasonings.
- After the beans are cooked tender, add in the remaining vegetables. Don't over cook the vegetables. Add in water as necessary.
