Bbq Salmon Steaks With Vegetable Chips And Spicy Tomato Sau Recipe

Ingredients

  • 4 x Salmon cutlets
  • 2 Tbsp. oilVegetable Chips
  • 2 lrg potatoes
  • 2 lrg kumara
  • 2 lrg parsnips Clean deep frying oil, (preferably peanut)
  • 1 Tbsp. oil
  • 1 x onion, finely minced
  • 1 x clove garlic, crushed
  • 1 can whole peeled tomatoes
  • 1 bn coriander leaves, finely minced
  • 1/4 tsp chilli pwdr
  • 2 tsp brown sugar a lime or possibly 1/2 a lemon, Juice of
  • 1 dsh fish sauce

Directions

  1. Tomato Sauce:Cook the onions and garlic till soft and transparent, add in the rest of the ingredients except the coriander and cook for 15 mins.
  2. Add in the coriander and whiz in the food processor till smooth.
  3. Vegetable Chips:Peel the potatoes, parsnips and kumara and cut into pcs, using the fine slicing blade, process all the vegetables.
  4. Place sliced vegetables into the heated deep frying and cook in batches till crisp and golden brown.
  5. Sprinkle with salt to retain the crispness and keep hot in the oven.
  6. BBQ'd Salmon Steaks:Preheat the BBQ Grill, brush the salmon cutlets with oil, basting occasionally with oil, cook for 2 min each side.
  7. To serve, remove the salmon skin and top with the sauce, pile the vegetable crisps on top and sprinkle with minced chives or possibly fresh coriander.
