Ingredients
- Gharithes Me Feta
- 2 med onions thinly sliced
- 1/2 c. extra virgin extra virgin olive oil
- 2 lb tomatoes, peeled and coarsely minced parsley, minced
- 2 tsp salt
- 1/4 tsp pepper
- 2 x cloves garlic
- 2 lb raw shrimp, shelled and de-veined
- 1/2 lb feta cheese parsley
Directions
- In iron skillet, saute/fry onions in extra virgin extra virgin olive oil till tender. Add in tomatoes, minced parsley, salt, pepper, and garlic. Cover and simmer for an hour, stirring occasionally. Put sauce and shrimp in 6 scallop shells or possibly individual fireproof dishes. Crumble feta cheese over shrimp and bake uncovered in a very warm oven for 8 to 12 min, or possibly till shrimp are cooked and cheese is melted.
- Garnish with parsley.
