  2. A quince is a yellow-skinned fruit which tastes like a cross between an apple and a pear. Because of their hard texture, they taste better cooked.
  3. Remove stone from quinces, keeping fruit as intact as possible for stuffing.
  4. (A melon baller works well.) If using apples, core.
  5. Preheat oven to 350 degrees. In a medium bowl, mix almonds, brown sugar, wine and cloves. Place quinces or possibly apples in buttered baking dish. Fill quinces or possibly apples with filling; dust tops with cinnamon and bake till quinces or possibly apples are tender, about 50 min. Let cold. Serve topped with syrup from baking dish.
  6. Makes 6 servings.
