Baked Onions

Ingredients

  • 6 med Yellow onions
  • 2 quart Chicken stock
  • 3 Tbsp. Butter, melted
  • 1/2 tsp Paprika
  • 1/4 tsp Freshly grnd pepper
  • 1/4 tsp Salt
  • 2 Tbsp. Butter, melted
  • 1/2 c. Bread crumbs
  • 1/2 tsp Salt
  • 1/8 tsp Dry thyme, whole

Directions

  1. Peel onions but leave them whole. Place the peeled onions in a large pot and add in the chicken stock. Bring to a boil, over, and simmer gently for 30 min. Carefully drain the onions, reserving the stock for another use.
  2. Place the onions in a shallow oven proof baking dish so which they fit comfortably. Combine the melted butter, paprika, black pepper, salt, and pour the mix over the onions. Turn the onions so which they all are coated with the seasoned butter mix. Bake in a preheated 400 oven for 15 min. Mix together the ingredients for the crumb topping and sprinkle it over the onions and bake for 15 min more.
