Baked Oatmeal Recipe

Ingredients

  • 3 c. Oatmeal
  • 1/2 c. Brown sugar, (I use Demerera sugar)
  • 2 tsp Baking pwdr
  • 1/2 tsp Cinnamon
  • 1/2 tsp Salt
  • 1/2 c. Applesauce
  • 1 tsp Vanilla
  • 2 x Large eggs worth Ener-g egg replacer equivalent
  • 1 c. Soy lowfat milk
  • 1/2 c. Raisins -or possibly-, (up to 1)
  • 1 pkt (12 ounce) frzn blueberries, thawed
  • 1 tsp Dehydrated lemon peel -or possibly-
  • 2 tsp Grated lemon zest

Directions

  1. Preheat oven to 350 degrees. Mix the dry ingredients in one bowl. Mix the wet ingredients in another bowl. Stir the wet and dry ingredients together and add in the raisins or possibly blueberries. Spread in a 9x9 pan, lightly sprayed with nonstick spray. Bake 25-35 min. Serve as-is, or possibly top with some sort of lowfat milk. (I use White Wave fresh Soy beverage)
