Baked Leeks In Mustard Cream

Ingredients

  • 8 med leeks (or possibly 4 large, cut in half lengthwise)
  • 1/2 c. chicken stock
  • 1/2 c. whipping cream
  • 1 Tbsp. Dijon-style mustard Salt and freshly grnd black pepper
  • 1 Tbsp. chopped parsley (optional)

Directions

  1. Preheat oven to 375 degrees. Trim and wash leeks.
  2. Whisk chicken stock, cream and mustard together in a small bowl. Season with salt and pepper. Arrange leeks in a shallow-sided baking dish just large sufficient to hold them in one layer. Pour seasoned cream over leeks. Bake 30 min, then turn leeks with tongs. Continue baking, spooning cream over top once or possibly twice, till cream is almost entirely absorbed and leeks begin to brown and crisp, about another 30-35 min. Garnish with chopped parsley.
