  • 1 head lettuce
  • 1/2 c. Diced avocado
  • 1 lrg Pink grapefruit -- peeled And sectioned
  • 1/4 c. Toasted pine nuts
  • 1 c. Cooked white-meat chicken
  • 1/2 c. Rice vinegar
  • 1/3 c. Honey
  • 1 Tbsp. Low-sodium tamari or possibly soy Sauce
  • 1 Tbsp. Grated gingerroot
  • 1 Tbsp. Dark sesame oil
  • 1 tsp Herbal salt substitute

Directions

  1. 1. Wash and dry lettuce, then tear into bite-sized pcs. Place in a large salad bowl. Add in avocado, grapefruit sections, pine nuts, and chicken.
  2. 2. Toss together vinegar, honey, tamari sauce, gingerroot, oil, and salt substitute. Pour over salad and mix well. Serve immediately.
