%20for%20our%20evening%20cocktail%20hour,%20a%20la%201954,%20here%20at%20Chez%20Ninj.%20Corny,%20but%20it's%20a%20very%20relaxing%20way%20to%20end%20the%20day,%20like%20setting%20an%20appointment%20to%20sit%20down%20together%20and%20talk.%20But%20with%20cocktails,%20so%20it's%20extra%20festive%20and%20not%20at%20all%20therapy-ish.%3C/p%3E%3Cp%3EI'm%20currently%20a%20ridiculously%20huge%20fan%20of%20the%20simple,%20perfect%20vodka%20gimlet,%20probably%20as%20much%20for%20it's%20beautiful%20celery%20color%20as%20anything.%20(I%20swear,%20one%20of%20these%20days%20I'm%20going%20to%20carry%20one,%20in%20a%20martini%20glass,%20into%20the%20Benjamin%20Moore%20paint%20store%20and%20see%20if%20they%20can%20color%20match%20it.)%3C/p%3E%3Cp%3ESo,%20given%20Cocktail%20Hour,%20I'm%20always%20looking%20for%20good%20recipes%20for%20accompanying%20nibbles.%20Nothing%20sweet,%20just%20a%20little%20salty-cheesy%20somethin'-somethin'%20--%20you%20know%20what%20I%20mean.%3C/p%3E%3Cp%3ETherefore,%20you%20probably%20heard%20me%20screaming%20in%20delight%20recently%20when%20I%20opened%20the%20November%20issue%20of%20Food%20and%20Wine%20and%20saw%20that%20the%20incomparable%20Dorie%20Greenspan%20(insert%20reverential%20bow)%20had%20seemingly%20answered%20my%20prayers.%3C/p%3E%3Cp%3EMove%20over,%20crackers%20and%20cheese%20...%3C/p%3E%3Cp%3EGet%20out%20of%20town,%20spicy%20nut%20mix%20....%3C/p%3E%3Cp%3ECocktail%20cookies%20have%20arrived.%3C/p%3E%3Cp%3EI%20honed%20in%20immediately%20on%20the%20Apricot-Tarragon%20cookies:%20they%20looked%20so%20light%20and%20flaky,%20with%20beautiful%20flecks%20of%20green%20and%20orange.%20I%20just%20had%20to%20make%20them.%3C/p%3E%3Cp%3EResult?%20Huge%20thumbs%20up%20from%20Mr.%20Ninj;%20%22wicked%20awesome%22%20even.%20(See?%20He's%20starting%20to%20fit%20right%20in%20up%20here%20in%20New%20England!)%3C/p%3E%3Cp%3EI%20made%20mine%20with%20a%20heart-shaped%20cookie%20cutter%20to%20illustrate%20my%20undying%20love%20for%20Dorie.%20No,%20seriously,%20for%20some%20reason%20I%20do%20not%20own%20a%20circular%20cookie%20cutter%20and%20the%20heart%20was%20the%20closest%20I%20could%20find.%20I%20thought%20it%20more%20elegant%20and%20worthy%20of%20Cocktail%20Hour%20than,%20say,%20the%20ghost%20or%20the%20christmas%20tree%20cutters.%3C/p%3E%3Cp%3EThey're%20pure%20cookie%20love.%3C/p%3E%3Cp%3ESo%20break%20out%20that%20cocktail%20shaker%20and%20whip%20up%20some%20cocktail%20cookies.%20You%20look%20more%20like%20Don%20and%20Betty%20Draper%20already,%20I%20swear.%3C/p%3E%3Cp%3EApricot-Tarragon%20Cocktail%20Cookies%20from%20Dorie%20Greenspan%3C/p%3E%3Cp%3E(Note:%20I'm%20including%20the%20full,%20word-for-word%20recipe%20%20here%20because%20there%20seemed%20to%20be%20some%20issue%20with%20the%20text%20of%20the%20recipe%20on%20the%20Food%20and%20Wine%20site)%3C/p%3E%3Cp%3EIngredients:%3C/p%3E%3Cp%3EDirections:%3C/p%3E%3Cp%3EIn%20a%20small%20bowl,%20cover%20the%20apricots%20with%20hot%20water%20and%20let%20stand%20for%2010%3C/p%3E%3Cp%3Eminutes,%20until%20they%20are%20plump.%20Transfer%20the%20apricots%20to%20paper%20towels%20to%3C/p%3E%3Cp%3Edrain.%3C/p%3E%3Cp%3EIn%20another%20small%20bowl,%20rub%20the%20tarragon%20leaves%20into%20the%20sugar%20until%20they%3C/p%3E%3Cp%3Eare%20moist%20and%20aromatic.%20In%20a%20standing%20mixer%20fitted%20with%20the%20paddle,%3C/p%3E%3Cp%3Ebeat%20the%20butter%20with%20the%20tarragon%20sugar%20at%20low%20speed%20until%20creamy.%20Beat%3C/p%3E%3Cp%3Ein%20the%20egg%20yolk%20until%20just%20combined,%20about%201%20minute.%20Slowly%20drizzle%20in%3C/p%3E%3Cp%3Ethe%20olive%20oil%20and%20beat%20until%20smooth.%20Add%20the%20salt%20and%20flour%20and%20beat%3C/p%3E%3Cp%3Euntil%20just%20incorporated.%20Using%20a%20large%20spatula,%20fold%20in%20the%20apricots.%3C/p%3E%3Cp%3ETurn%20the%20cookie%20dough%20out%20onto%20a%20work%20surface%20and%20knead%20until%20it%20just%3C/p%3E%3Cp%3Ecomes%20together.%20Divide%20the%20dough%20in%20half%20and%20press%20each%20half%20into%20a%3C/p%3E%3Cp%3Edisk.%20Roll%20out%20each%20disk%20between%202%20sheets%20of%20wax%20paper%20to%20about%201/4%20inch%3C/p%3E%3Cp%3Ethick.%20Slide%20the%20wax%20paper%E2%80%93covered%20disks%20onto%20a%20baking%20sheet%20and%20freeze%3C/p%3E%3Cp%3Efor%20at%20least%201%20hour,%20until%20very%20firm.%3C/p%3E%3Cp%3EPreheat%20the%20oven%20to%20350%C2%B0%20and%20line%202%20large%20baking%20sheets%20with%20parchment%3C/p%3E%3Cp%3Epaper.%20Working%20with%20one%20piece%20of%20cookie%20dough%20at%20a%20time,%20peel%20off%20the%3C/p%3E%3Cp%3Etop%20sheet%20of%20wax%20paper.%20Using%20a%201%201/2-inch%20round%20cookie%20cutter,%20stamp%3C/p%3E%3Cp%3Eout%20the%20cookies%20as%20close%20together%20as%20possible.%20Arrange%20the%20cookies%201%3C/p%3E%3Cp%3Einch%20apart%20on%20the%20prepared%20baking%20sheets.%3C/p%3E%3Cp%3EBake%20the%20cookies%20for%20about%2020%20minutes,%20until%20they%20are%20lightly%20golden;%3C/p%3E%3Cp%3Eshift%20the%20baking%20sheets%20from%20top%20to%20bottom%20and%20front%20to%20back%20halfway%3C/p%3E%3Cp%3Ethrough.%
