Ingredients
- 10 ounce Canned diced tomatoes with green chiles
- 1/2 c. Scallions, sliced
- 1 x Clove garlic, chopped
- 1 tsp Beef bouillon granules
- 1 tsp Italian herb seasoning, crushed
- 1 c. Tomato sauce
- 3/4 lb Lamb shoulder, cut into 3/4 inch cubes
- 1 med Zucchini, halved lengthwise and sliced
- 1 lb Canned Great Northern beans, liquid removed
Directions
- Prep: 10 minutes, Cook: 15 minutes.
- Combine all ingredients, except zucchini and beans, in a microwave casserole. Cover and microwave on high 3 min. Remove cover and stir.
- Continue to microwave another 4 min. Stir in zucchini and beans and microwave another 6-7 min, till meat is cooked throughout.
