Ingredients Convert Measures
- 4 x Fillets American grouper, (8 oz)
- Salt and pepper to taste
- 1 c. Toasted corn meal
- 1 Tbsp. Extra virgin olive oil
- Relish
- Plum Sauce
- Dill for garnish
- 1/4 c. Blanched lemon zest
- 1/4 c. Julienne jalapenos
- 2 c. Julienne carrots
- 2 c. Julienne fennel bulbs
- 1/2 c. Rice wine vinegar
- 1/4 c. Extra virgin olive oil
- 8 x Plums, Juice of
- 1 x Lemon, Juice of
- 1 Tbsp. Chopped, fresh dill
Directions
- Season fillets of grouper with salt and pepper and coat with corn meal. In a saute/fry pan heat oil, and saute/fry grouper for 3 min on each side, or possibly till done.
- Relish:Combine all ingredients and season to taste with salt and pepper.
- Plum and Lemon Juice with Dill:Combine and spoon over grouper.
