- 1 medium red bell pepper, diced
- 1 cup green onion, sliced
- 1 cup "summer crisp" canned corn, drained
- 1 finely diced jalapeno pepper
- 1/2 cup chopped fresh cilantro
- 1/2 cup apple cider vinegar
- 3 TBS granulated sugar
- 1 TBS canola oil
- salt and pepper, to taste
- dash of ground cayenne pepper (optional)

,%20sometimes%20it%20needs%20to%20just%20slow%20down!%20%20I%20find%20it's%20the%20busiest%20season%20of%20them%20all!%20%20From%20graduations,%20parties,%20BBQ's,%20weddings,%20birthday%20celebrations%20to%20entertaining%20on%20the%20patio%20in%20the%20warm%20evenings%20with%20friends,%20it%20seems%20that%20every%20single%20moment%20is%20booked%20up%20with%20some%20event%3C/p%3E%3Cp%3EAll%20three%20of%20my%20kids%20were%20born%20in%20the%20summer.%20%20Of%20course,%20they%20are%20older%20now%20and%20don't%20require%20the%20elaborate%20birthday%20parties%20they%20did%20when%20they%20were%20little,%20but%20my%20family%20still%20loves%20to%20get%20together%20and%20celebrate%20their%20birthdays.%20%20Last%20week,%20my%20son%20turned%2021%20and%20we%20invited%20my%20parents%20and%20my%20husband's%20parents%20over%20to%20celebrate.%20%20I%20had%20no%20idea%20what%20I%20was%20going%20to%20serve%20everyone!%20(%20Believe%20it%20or%20not,%20there%20are%20times%20when%20I%20would%20prefer%20to%20NOT%20cook%20for%20a%20bunch%20of%20people!)%3C/p%3E%3Cp%3ELuckily,%20a%20couple%20of%20days%20before%20his%20birthday,%20I%20found%20the%20perfect%20solution%20to%20my%20party%20needs.%20%20I%20stopped%20into%20Walmart%20to%20pick%20up%20some%20milk%20and%20eggs%20for%20the%20week,%20and%20spotted%20their%20fresh,%20hot%20fried%20chicken%20at%20the%20Deli%20counter.%20%20I%20decided%20right%20then%20and%20there%20that%20Deli%20fried%20chicken%20is%20what%20I%20would%20serve%20at%20my%20son's%20birthday.%20%20I%20was%20delighted%20to%20find%20out%20that%20Walmart's%20Deli%20fried%20chicken%20was%20available%20in%20many%20different%20sizes;%20single%20portions,%20buckets,%20bulk%20quantities%20of%2050%20-100%20pieces%20(make%20sure%20you%20call%20and%20order%20these%20large%20sizes%20ahead%20of%20time),%20and%20the%20Grab-n-Go%208%20piece%20sizes%20(hot%20and%20cold)%20pre-packed%20and%20ready%20for%20purchase.%3C/p%3E%3Cp%3EOn%20the%20day%20of%20the%20party,%20I%20picked%20up%20our%20chicken%20%20from%20the%20deli,%20grabbed%20a%20few%20items%20from%20the%20bakery%20to%20go%20with%20the%20chicken,%20and%20picked%20up%20the%20ingredients%20I%20needed%20to%20make%20this%20super%20easy%20Firecracker%20Coleslaw.%20I%20can't%20imagine%20fried%20chicken%20without%20slaw,%20and%20this%20zippy%20Firecracker%20Coleslaw%20made%20a%20great%20side%20dish%20to%20the%20chicken.%20It's%20a%20delicious,%20healthy,%20fresh%20side%20dish%20full%20of%20veggies%20and%20complimented%20the%20chicken%20perfectly!%3C/p%3E%3Cp%3EEveryone%20enjoyed%20the%20chicken%20and%20all%20the%20goodies%20that%20I%20served%20along%20with%20it,%20including%20the%20coleslaw.%20I%20enjoyed%20a%20stress%20free%20evening%20with%20my%20family,%20because%20I%20didn't%20have%20to%20worry%20about%20cooking!%3C/p%3E%3Cp%3EWith%20the%204th%20of%20July%20just%20days%20away,%20I'm%20thinking%20of%20picking%20up%20more%20of%20this%20time%20saving%20chicken%20for%20our%20little%20celebration!%20%20I%20know%20I'll%20be%20making%20the%20Firecracker%20Coleslaw%20again%20as%20a%20side%20dish%20too!%20%20What%20occasion%20will%20you%20be%20picking%20up%20fresh%20hot%20Walmart%20deli%20fried%20chicken%20for?%3C/p%3E%3Cp%3EReady%20to%20make%20this%20delicious%20easy%20slaw?%20%20Just%20toss%20everything%20in%20a%20big%20bowl%20and%20mix!%3C/p%3E%3Cp%3ERefrigerate%20for%20at%20least%20an%20hour%20to%20let%20the%20flavors%20blend%20and%20enjoy!%3C/p%3E%3Cp%3EFirecracker%20Coleslaw%3C/p%3E%3Cp%3EBy%20Renee%20P.%3C/p%3E%3Cp%3EPublished%2006/24/2015%3C/p%3E%3Cp%3ECrunchy%20veggies%20bathed%20in%20a%20non-mayo%20sweet%20and%20sour%20dressing%20for%20an%20explosion%20of%20healthy%20goodness.%3C/p%3E%3Cp%3EIngredients%3C/p%3E%3Cp%3EInstructions%3C/p%3E%3Cp%3EIn%20large%20bowl,%20whisk%20together%20apple%20cider%20vinegar,%20sugar,%20and%20oil%20until%20sugar%20is%20dissolved.%3C/p%3E%3Cp%3EAdd%20in%20coleslaw%20mix,%20red%20pepper,%20green%20onion,%20corn,%20jalapeno%20pepper,%20and%20cilantro.%20Mix%20to%20combine%20with%20dressing.%20Taste%20for%20salt%20and%20pepper%20and%20add%20as%20you%20like.%20For%20more%20kick,%20add%20a%20dash%20of%20ground%20cayenne.%3C/p%3E%3Cp%3ECover%20and%20refrigerate%20for%20at%20least%20one%20hour.%20Stir%20before%20serving.%20Enjoy!%3C/p%3E%3Cp%3EYield:%2010%20servings%3C/p%3E%3Cp%3EPrep%20Time:%2000%20hrs.%2010%20mins.%3C/p%3E%3Cp%3ECook%20time:%2000%20hrs.%2000%20mins.%3C/p%3E%3Cp%3ETotal%20time:%2010%20mins.%3C/p%3E%3Cp%3ETags:%20slaw,%20coleslaw,%20salad,%20chicken,%20summer,%20side%20dish%3C/p%3E%3Cp%3EAdapted%20from%20Allrecipes%3C/p%3E%3Cp%3ELike%20what%20you%20see?%20%20Follow%20RKA%20on%20all%20these%20social%20networks!!%3C/p%3E){kind=link}
