This delicious Lychee fruit mousse is wonderfully light and easy to make. .. Spoon the mousse into tall glasses and top or layer with fresh halved lychees and/or whipped cream (optional).This is definietly a dessert that is absolutely and utterly delicious just so happens to be healthy too,how can anyone,possibly have a problem with it? You can’t! It’s impossible!.It’s packed with bright summery flavors and it is super delicious and as the name suggests,it has only 4 ingredients that go into making this mousse.It can be made up to one day before required if preferred.It still tastes amazing.
Ingredients
- 2 440 gm can lychees
- 3 tsp gelatine
- 1 cup light sour cream
- pink food coloring
Directions
- Drain lychees,reserve 3/4 cup syrup.
- Sprinkle gelatine over reserved syrup,dissolve over hot water(or microwave on HIGH about 30 seconds);cool,but DO NOT let it set.
- Puree lychees in a blender or processor,strain,return strained mixture to blender.
- Add sour cream and gelatine mixture,blend until smooth.
- Stir in a tiny drop of food coloring if you wish.
- Pour into individual glasses,refrigerate until set.
- Serve with whipped cream,extra lychees and glace cherries
