Forgive me if you all know this, but I have a freezer bag that I put leftover bits of all kinds of cheese into. It keeps it from getting moldy and lasts a long time there. Plus, the combinations of different cheeses makes the greatest macaroni and cheese and other baked cheese dishes. I learned this many years ago, and then saw some chef on TV admitting to doing this, too. It might have been Julia Child.

I have never thought to do that! What a great idea, now I wont have to worry about the money loss from green moldy cheese I am cutting off all the time I love this! thank you!!!!!

Do you put the cheese in the freezer or
Just refrigerate ?

What a great idea !! I just threw away several cheeses left over from a party ,that will now find refuse in my freezer and become whatever !!
