Ingredients: 3 c. minced cooked chicken; 2 x mangoes minced; 4 x celery stalks sliced; 1 can pineapple chunks - (8 ounce) liquid removed; 1/2 c. slivered almonds toasted, minced; 1/2 c. Jalapeno-Lime Mayonnaise (see below); 1/2 tsp salt; 1/2 c. mayonnaise; 1 x jalapeno pepper chopped; 1 tsp grated lime rind; 2 tsp fresh lime juice

Ingredients

3 c. minced cooked chicken
2 x mangoes minced
4 x celery stalks sliced
1 can pineapple chunks - (8 ounce) liquid removed
1/2 c. slivered almonds toasted, minced
1/2 c. Jalapeno-Lime Mayonnaise (see below)
1/2 tsp salt
1/2 c. mayonnaise
1 x jalapeno pepper chopped
1 tsp grated lime rind
2 tsp fresh lime juice

Directions

Stir together first 5 ingredients in a medium bowl.
Stir together mayonnaise and salt; stir into chicken mix. Chill.
For Jalapeno-Lime Mayonnaise: Stir together all ingredients; chill. (
Makes about 1/2 c.)
This recipe yields 6 servings.
