Tex-Mex Hot Chicken Salad Recipe

Great comfort food casserole with a Tex-Mex twist.

Ingredients

  • 4 cups diced, grilled or sauted chicken (about 5 breasts) - see links below
  • 2 tbs. fresh lemon juice
  • 1/2 cup toasted almonds
  • 1 cup mayonnaise
  • 1 cup shredded Pepper Jack cheese
  • 2 cups chopped celery
  • 1 can cream of mushroom soup
  • 4 minced scallions
  • 1 tbs. chopped cilantro
  • 1 tsp. Tabasco
  • Topping: 1 1/2 cups crushed Lay's potato chips, or your favorite

Directions

  1. Grill or saute chicken, dice.
  2. Heat oven to 375 degrees
  3. Lightly toast almonds.
  4. Combine all ingredients in a mixing bowl, combine, transfer to a baking dish.
  5. Top with potato chips.
  6. Bake 20-30 minutes.
