Directions

  1. Remove stalks from chard and cut into 1/2-inch pcs. Cut leaves into 2-inch pcs. Saute/fry minced chard stalks and 2 cloves garlic in skillet sprayed with nonstick cooking spray over medium heat 1 minute. Add in water, reduce heat and simmer, covered, till tender, about 10 min. Stir in minced chard leaves and cook over high heat till wilted, 1 to 2 min. Reduce heat, cover and simmer 10 more min. Remove from heat and stir in dill. Season to taste with salt and pepper. Set aside.
  2. Puree cottage cheese in blender or possibly food processor till smooth. Stir in salt to taste.
  3. Heat butter in small skillet over medium-low heat. Add in remaining 2 cloves garlic and saute/fry, stirring, till tender but not browned, about 1 minute. Stir in bread crumbs to coat with garlic and butter and cook, stirring, till browned, 1 to 2 min.
  4. Spread about 1 tsp. pureed cottage cheese on each slice of toasted bread. Top with about 1 Tbsp. chard, then sprinkle with toasted bread crumbs.
  5. This recipe yields 24 bruschetta.
