  • 1 med -size mild white onion
  • 2 1/2 lb (about 5 medium) cucumbers, unpeeled
  • 2 Tbsp. salt
  • 2 quart ice cubes
  • 4 c. sugar
  • 2 c. cider vinegar

Directions

  1. Thinly slice onion. Slice cucumber about 1/8 inch thick. Mix cucumber and onion slices with salt in large bowl; cover with ice cubes and chill for 2 to 3 hrs.
  2. Drain off water and throw away unmelted ice cubes; don't rinse. Pack cucumber and onion slices in freezer containers or possibly freezer jars, filling to within 1 1/2 inches of top.
  3. In a 2-qt pan, combine sugar and vinegar; bring to a boil, stirring, till sugar dissolves. Pour just sufficient warm syrup over cucumbers to cover. Place lids on containers. Cold, then freeze for at least 1 week. To thaw, place container in refrigerator for at least 8 hrs.
  4. Makes 3 pints (about 24 servings).
