Ingredients
- 1 1/2 cups peeled, pitted and chopped peaches and nectarines
- 1/2 cup chopped rhubarb
- 1/3 cup chopped onion
- 1/4 cup chopped red pepper
- 1 tsp finely diced jalapeño
- 1/2 cup brown sugar (I didn't pack mine, but pack if you like sweeter)
- 1/4 cup raisins
- 3 Tbs apple cider vinegar (may use 1/4 cup)
- 2 Tbs lemon juice
- 2 cloves garlic, pressed
- 1 Tbs minced fresh ginger
- 1/4 tsp dry mustard
- pinch ground clove
- salt to taste

%20%20)%20and%20as%20close%20as%20down%20the%20street.%20%20I've%20discovered%20new%20foods%20and%20preparation%20techniques,%20mastered%20exciting%20gadgets,%20and%20learned%20that%20our%20kitchen%20is%20far%20more%20fun%20when%20it%20isn't%20totally%20clean.%3C/p%3E%3Cp%3EFood%20blogging%20also%20occasionally%20brings%20me%20fabulous%20surprises%20in%20the%20mail,%20the%20latest%20being%20a%20special%20box%20from%20Melissa's%20Produce%20along%20with%20a%20challenge%20to%20me%20and%20my%20fellow%20San%20Diego%20Food%20Bloggers%20to%20create%20a%20dish%20using%203-4%20of%20the%20treats%20in%20the%20box.%3C/p%3E%3Cp%3EOn%20the%20cutting%20edge%20of%20the%20impending%20summer%20season,%20a%20box%20filled%20with%20organic%20peaches%20and%20nectarines,%20brilliant%20stalks%20of%20rhubarb,%20an%20incredibly%20sweet%20Korean%20Melon,%20fresh%20fava%20beans,%20a%20fresh%20young%20coconut%20and%20a%20zesty%20Hatch%20Chili%20salsa%20was%20met%20with%20a%20shout%20of%20glee%20from%20Liv%20and%20and%20exclamation%20of%20%22Can%20I%20have%20the%20peaches%20now??%22.%20%20Sharing%20just%20one%20of%20the%20fragrant%20peaches%20with%20my%20girl,%20I%20repacked%20the%20rest%20waiting%20for%20inspiration.%3C/p%3E%3Cp%3EWith%20peach%20being%20a%20particular%20family%20favorite,%20a%20recipe%20including%20the%20perfectly%20ripe%20peaches%20and%20nectarines%20was%20a%20must.%20%20And%20then%20there%20was%20the%20rhubarb.%20%20Something%20I've%20never%20actually%20used,%20but%20that%20I%20remember%20my%20grandmother%20making%20into%20a%20pie%20that%20I%20actually%20didn't%20like.%20%20Hmmm.%20%20Yes,%20I%20felt%20the%20need%20to%20conquer%20the%20rhubarb.%20%20As%20such%20I%20set%20out%20to%20the%20back%20yard%20with%20the%20fresh%20young%20coconut%20in%20hand%20(complete%20with%20pink%20cocktail%20umbrella%20for%20effect)%20along%20with%20a%20bag%20of%20chips%20and%20Melissa's%20Hatch%20Chili%20Salsa%20to%20ponder%20said%20ingredients.%3C/p%3E%3Cp%3EThe%20result??%20%20This%20sweet%20yet%20ever%20so%20slightly%20spicy%20Rhubarb-Peach%20Chutney.%20%20Chutney,%20also%20something%20my%20grandmother%20always%20had%20on%20hand%20that%20I%20never%20touched,%20is%20new%20to%20me.%20%20Kind%20of%20a%20strange%20word,%20and%20many%20times%20made%20with%20ingredients%20that%20aren't%20always%20at%20the%20top%20of%20my%20list,%20I've%20just%20not%20taken%20the%20time%20to%20explore%20what%20it's%20all%20about.%3C/p%3E%3Cp%3ERhubarb%20Peach%20Chutney...%20and%20unexpected%20fabulous%20pleasure!%3C/p%3E%3Cp%3EA%20little%20vinegary%20as%20it%20simmered,%20I%20wasn't%20sure%20about%20this%20recipe%20(a%20conglomerate%20of%20some%204%20different%20versions%20I%20found%20online),%20but%20I%20picked%20and%20chose%20the%20ingredients%20that%20most%20appealed%20to%20me%20and%20when%20mixed%20with%20couscous%20and%20grilled%20veggies%20I%20have%20a%20meal%20to%20be%20proud%20of.%3C/p%3E%3Cp%3EWith%20fresh%20corn%20hitting%20the%20store%20shelves%20about%20the%20same%20time%20as%20my%20precious%20box%20arrived,%20it%20seemed%20fitting%20to%20bring%20on%20the%20summer%20ingredients.%20%20Grilled%20zucchini%20and%20peppers,%20met%20up%20with%20the%20fresh%20fava%20beans%20and%20of%20course%20a%20fresh%20California%20Avocado%20over%20a%20bed%20of%20couscous%20and%20the%20Rhubarb%20Peach%20Chutney%20completed%20the%20salad.%20%20Simply%20divine%20even%20if%20I%20do%20say%20so%20myself!!%3C/p%3E%3Cp%3EA%20big%20thank%20you%20to%20Melissa's,%20a%20company%20with%20some%20of%20the%20freshest%20ideas%20in%20produce!%20%20While%20I%20feel%20particularly%20lucky%20to%20live%20within%20a%20few%20hours%20of%20Melissa's%20280,000%20sq%20ft%20warehouse%20in%20Los%20Angeles,%20this%20country%20is%20lucky%20to%20have%20their%20produce%20nationwide.%20%20As%20the%20largest%20distributor%20of%20specialty%20produce%20in%20the%20US,%20we%20can%20all%20enjoy%20quality%20global%20ingredients%20thanks%20to%20their%20efforts.%3C/p%3E%3Cp%3ENow%20won't%20you%20join%20me%20as%20we%20visit%20some%20of%20my%20fellow%20San%20Diego%20food%20bloggers%20to%20see%20what%20Melissa's%20Produce%20Box%20inspired%20them%20to%20make?%3C/p%3E%3Cp%3EGrilled%20Veggie%20Salad%20with%20Couscous%20and%20Rhubarb%20Peach%20Chutney%3C/p%3E%3Cp%3ESummer%20at%20its%20best%20with%20grilled%20veggies%20and%20a%20tangy%20Rhubarb%20Peach%20Chutney%20over%20a%20bed%20of%20fluffy%20couscous.%20%20Fava%20beans,%20another%20new%20to%20me%20veggie,%20added%20a%20wonderful%20texture%20to%20this%20salad,%20but%20I%20will%20admit%20they%20are%20a%20little%20labor%20intensive.%20%20Worth%20the%20effort%20though%20for%20the%20taste%20and%20health%20benefits!%3C/p%3E%3Cp%3EGrilled%20corn%3C/p%3E%3Cp%3EGrilled%20zucchini%3C/p%3E%3Cp%3EGrilled%20red%20peppers%20(or%20jarred%20roasted%20red%20peppers)%3C/p%3E%3Cp%3Eprepared%20fava%20beans%3C/p%3E%3Cp%3Eprepared%20couscous%3C/p%3E%3Cp%3Eavocado%3C/p%3E%3Cp%3ERhubarb%20Peach%20Chutney%3C/p%3E%3Cp%3EPlace%20prepared%20couscous%20into%20a%20bowl%20and%20stir%20with%202%20Tbs%20of%20chutney.%20%20Top%20with%20grilled%20veggies%20and%20fava%20beans.%20%20Spoon%20another%202%20Tbs%20of%20chutney%20on%20top%20of%20veggies%20and%20top%20with%20sliced%20avocado.%20%20Salt%20and%20pepper%20to%20taste.%3C/p%3E%3Cp%3ERhubarb%20Peach%20Chutney%3C/p%3E%3Cp%3ESweet%20and%20tangy%20with%20a%20little%20bit%20of%20spice,%20serve%20this%20chutney%20over%20a%20salad,%20on%20top%20of%20a%20nice%20brie%20or%20anywhere%20you%20like!%3C/p%3E%3Cp%3EPlace%20all%20of%20the%20ingredients%20except%20the%20peaches%20and%20nectarines%20into%20a%20large%20sauce%20pan%20set%20on%20the%20stove%20over%20medium%20heat%20and%20bring%20to%20a%20simmer.%20%20Allow%20to%20simmer%20about%2010%20minutes,%20then%20add%20the%20peaches%20(I%20like%20my%20peaches%20to%20remain%20a%20little%20chunky).%20%20Stirring%20frequently,%20simmer%20for%20an%20additional%2025-35%20minutes%20or%20until%20the%20mixture%20has%20thickened%20to%20desired%20consistency.%3C/p%3E%3Cp%3ERemove%20from%20heat%20and%20cool.%20%20Place%20chutney%20into%20clean%20jars%20and%20refrigerate%20for%20up%20to%2010%20days.%3C/p%3E%3Cp%3EGrilled%20Veggie%20Salad%20with%20Fava%20Beans%20and%20Rhubarb%20Peach%20Chutney%3C/p%3E){kind=link}
