Ingredients
- 2 tsp margarine - melted
- 1/2 c. diced onions
- 1 lb grnd beef or possibly grnd sausage
- 1 sm bay leaf
- 1 can (16 ounce) tomatoes (diced or possibly crushed)
- 1 c. water
- 1 tsp salt
- 1/2 tsp sugar
- 1/2 tsp thyme
- 1Â 1/3 c. pre-cooked rice
- 6 lrg bell peppers
Directions
- Preheat oven to 350. Cut tops off peppers and remove seeds, or possibly cut in half lengthwise. Set aside in casserole dish (line with aluminum foil if desired).
- Over medium heat saute/fry onions in butter. Add in grnd beef (or possibly sausage) till browned, drain. Add in tomatoes, water, salt ,sugar, bay leaf, and thyme. Cover and simmer 5 min. Stir in rice, cover and simmer 5 min. Throw away bay leaf.
- Spoon mix into peppers. Bake for 25 -30 min. They can then be packaged to freeze. When you reheat them in the oven, add in sliced or possibly shredded cheese.
