  • 1 x garlic clove chopped
  • 1 Tbsp. extra virgin olive oil
  • 1 pkt frzn minced spinach - (10 ounce) thawed, squeezed dry
  • 1/4 tsp salt
  • 1 pch freshly-grnd black pepper
  • 3 slc bacon cooked, crumbled
  • 1/2 c. shredded Mozzarella cheese
  • 1/2 sm loaf Italian bread
  • 1 Tbsp. shredded Parmesan cheese

Directions

  1. In a large skillet saute/fry garlic in extra virgin olive oil over medium heat. Add in spinach, salt and pepper; cook, stirring occasionally, till heated through. Remove from the heat, cold for 5 min. Add in bacon and mozzarella, mix well.
  2. Slice bread horizontally. Divide and spread the spinach mix on each half. Sprinkle with Parmesan if you like. Bake at 450 degrees for 6 to 8 min or possibly till cheese is melted.
  3. This recipe yields 2 servings.
