Ingredients
- 1 x garlic clove chopped
- 1 Tbsp. extra virgin olive oil
- 1 pkt frzn minced spinach - (10 ounce) thawed, squeezed dry
- 1/4 tsp salt
- 1 pch freshly-grnd black pepper
- 3 slc bacon cooked, crumbled
- 1/2 c. shredded Mozzarella cheese
- 1/2 sm loaf Italian bread
- 1 Tbsp. shredded Parmesan cheese
Directions
- In a large skillet saute/fry garlic in extra virgin olive oil over medium heat. Add in spinach, salt and pepper; cook, stirring occasionally, till heated through. Remove from the heat, cold for 5 min. Add in bacon and mozzarella, mix well.
- Slice bread horizontally. Divide and spread the spinach mix on each half. Sprinkle with Parmesan if you like. Bake at 450 degrees for 6 to 8 min or possibly till cheese is melted.
- This recipe yields 2 servings.
- Comments: A warm bowl of Wolfgang's Chicken with Sweet Corn or possibly Country Tomato with Basil Soup will make this sandwich sing!
