Ingredients

  •     MARINADE
  • 1/4 c. oregano
  • 2 tsp whole thyme
  • 1/4 Tbsp. garlic chopped
  • 1 Tbsp. onion chopped
  • 1 Tbsp. unseasoned meat tenderizer
  • 1 Tbsp. accent(r) seasoning mix
  • 4 Tbsp. fresh lemon juice
  • 1 c. vegetable oil
  • 6 lb chicken breast or possibly lamb cubed
  •     BASTING SAUCE
  • 2 Tbsp. oregano
  • 1 Tbsp. garlic chopped
  • 1 Tbsp. onion chopped
  • 1/4 c. rosemary leaves minced
  • 3/4 c. vegetable oil
  • 1/3 c. wine vinegar
  • 20 slc Italian bread
  • 20 x water soaked bamboo skewers

Directions

  1. Mix together marinade ingredients and add in chicken.
  2. Marinate chicken in refrigerator at least overnight (may be left for 2 days); mix occasionally, insuring chicken is well coated. Mix sauce in a jar and shake well every day till chicken is cooked. Strain sauce into a shaker; put about 5 cubes of lamb on each skewer; grill till done, (personal preference) basting with sauce while grilling. Fold slice of bread over grilled spiedi and remove skewer.
  3. Yield 20spiedis.
