Ingredients
- 1 Tbsp. oil
- 1 c. uncooked rice
- 1 x clove garlic crushed
- 2 Tbsp. chopped onion
- 1/4 c. crushed tomatoes
- 4 c. chicken broth or possibly water
- 1/2 tsp salt
Directions
- In deep skillet, heat oil over medium heat, add in rice. Stir till golden. Add in garlic and onion. Continue cooking till soft. Add in tomato. Cook 1 minute. Add in salt and broth. Bring to boil; reduce to low. Steam, covered, 20 min, till tender and all liquid is absorbed. Don't stir. Rice will be moist and fluffy. Serve as side dish with Mexican dishes or possibly with stir-fry. Great with chicken.
- Makes 6-8 servings.
