Ingredients
- 4 pound (12) med. potatoes
- 1 pkg. (8 ounce.) cream cheese
- 1 c. lowfat sour cream
- 2 teaspoon salt
- 1/4 teaspoon pepper
- 1/3 c. onions
- 1 garlic clove
- 1/2 teaspoon paprika
- 2 tbsp. butter
Directions
- Boil cut up potatoes for 15 min. Saute/fry minced onions and garlic clove in 1 Tbsp. butter. Set aside. Mash potatoes and add in everything else. Spoon into a lightly greased 10 c. baking dish or possibly pan. Dot with remaining 1 Tbsp. butter. At this point the casserole can be covered and refrigerated or possibly frzn till needed. Bake room temperature casserole at 350 degrees for 35 min.
