  • 2 x Smoked pasilla chilies, stemmed and seeded
  • 1 tsp Whole coriander, toasted and grnd
  • 1 tsp Whole comino, toasted and grnd
  • 1 tsp Black peppercorns, toasted and grnd
  • 2 lb Cervena denver leg cut in 4 8ounce pcs
  • 2 Tbsp. Extra virgin olive oil
  •     Salt to taste
  • 1 whl fresh mango, peeled and small diced
  • 1 whl small jalapeno, bruniose
  • 1/2 sm Red onion, burniose
  • 1 sm Red bell pepper, bruniose
  • 1/4 x Bunce fresh cilantro, minced fine
  • 1 ounce Orange juice, freshly squeezed
  • 2 ounce Lime juice, freshly squeezed
  •     Salt to taste

Directions

  1. For the steaks
  2. In a large saute/fry pan on medium high heat, toast chilies, whole coriander, whole cumin and black peppercorns till they start to slightly brown and the aromas begin to increase. Then remove from heat and cold. Grind the spices in a spice grinder till coarse. Rub steaks with the extra virgin olive oil and season with pasilla chile crust and salt. Grill over hickory wood till steaks are medium rare. Let meat rest about three min before slicing.
  3. Slice and serve.
  4. For the salsa:In a small bowl, add in mango, jalapeno, onion, red bell pepper, cilantro and orange juice, mix lightly. Finish to taste with lime juice and salt.
  5. Yield: 4 servings
