Ingredients

  • 1 lb. boneless skinless chicken breasts
  • 4 cups chicken stock
  • 3 cups corn kernels (canned or frozen and thawed)
  • 1 1/2 cups pico de gallo (sometimes labeled "fresh salsa")
  • 3/4 cup chopped tomatoes
  • 1 small carrot, chopped
  • 1 clove garlic, chopped
  • 2 teaspoons fresh thyme leaves (or 1/2 teaspoon dried)
  • 1/2 teaspoon dried summer savory
  • 3/4 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 cup skim milk
  • 2 tablespoons cornstarch
  • Sliced green onion, for garnishing
