Ingredients
- 4 pound sirloin tip roast
- 1/4 teaspoon each: salt, pepper
- 2 carrots, grated
- zest of 1 lemon
- zest of 1 orange
- 1 lg. onion, grated
- 1/4 c. minced parsley
- 1/2 c. lowfat sour cream
Directions
- Tear sheet of foil to wrap and seal roast.
- Put roast in center. Season with salt, pepper.
- Mix vegetables and zest together and pat onto meat.
- Seal foil around meat using double folds.
- Carefully place package in shallow baking pan.
- Bake at 325 degrees F. for 3 hrs or until done to your liking.
- Open foil. Remove roast to serving platter.
- Pour meat juices into small pan. Add in lowfat sour cream and reheat. Don't boil.
