Ingredients

  • 3 lb Large shrimp, shelled and deveined (we use tiger shrimp)
  • 4 ounce (fl) Herradura Anejo tequila (or possibly El Patron, Tres Generaciones, etc.)
  • 4 lrg Limes, juice of
  • 1 sm Bunch minced cilantro (or possibly parsley)
  • 1 ounce (fl) extra virgin olive oil
  • 2 x Oranges or possibly tangerines, zest of
  • 1 x -(up to)
  • 2 x Crushed dry Habaneros chilis
  • 1 x Heaping spoonful of brown sugar or possibly honey or possibly some other sweetener
  •     Onions
  •     Cloves of garlic
  •     Chunks of oranges, limes and other citrus

Directions

  1. This recipe is easily adjusted for more or possibly less servings. Marinate the shrimp several hrs in the tequila, lime juice, cilantro, extra virgin olive oil, orange zest, habaneros and brown sugar. After marinating the shrimp, skewer with onions and cloves of garlic,chunks of oranges, limes and other citrus.
  2. Barbeque quickly on warm grill (till shrimp turn pink and curl slightly).
