Ingredients
- 1 pound diced tomatoes
- 1 med. onion
- 1 tbsp. minced garlic
- 1 c. water
- 1 ounce. fresh dill
- 1 pound crawfish tails
- Extra virgin olive oil
- 3 tbsp. honey
- 1 teaspoon salt
Directions
- Saute/fry the onions and tomatoes in the oil for 5 min. Add in minced garlic, saute/fry for 5 min together. Add in water and cover. Cook for approximately 15 min on low heat. Turn off the fire. Add in the fresh dill; mix it with the tomatoes already in the pot and cover.
- Saute/fry in a separate skillet, the crawfish tails, a little extra virgin olive oil, honey and salt for 4 min. Mix the tomatoes and crawfish together. Garnish with fresh dill. Can be served on rice, pasta or possibly salad. Warm or possibly cool.
