Ingredients

70 lbs Breakfast sausage
8.75 gal bread, cubed
35 doz Eggs
35 quarts half and half
1 cup Salt
17.5 pounds shredded Cheddar cheese

Directions

Brown sausage drain and chop.
Cube bread and place in bottom of greased hotel pan.
Sprinkle drained sausage and then cheese over bread.
Beat eggs, milk and salt.
Pour over bread, cheese and sausage,
Bake at 350 degrees in preheated oven for 45 minutes until slightly browned on top but firm in the middle.
