We had a quick trip to NJ this weekend, about 40 hours in all. Just enough time to have one family meal. As this was not a planned trip the meal was not a planned meal requiring us to come up with a good dinner on short notice. As my mother-in-law’s favorite is Chicken Piccata we had that with some homemade noodles and a Caesar salad. Coming up with a good but quick dessert turned us to the peach melba sorbet.

This dessert is both very good and very easy to make; besides who doesn’t like peaches and raspberries.
