Potato Pastry (Wheat Free, Gluten Free) Recipe

Ingredients

  • 1 x egg
  • 1 tsp water
  • 1 x and 1/2 c. mashed potato (see below)
  • 1 x and 1/4 c. pure maize corn flour
  • 1/2 c. powdered lowfat milk
  • salt and pepper to taste

Directions

  1. Combine egg and water with potatoes and mix well.
  2. Combine flour, powdered lowfat milk, salt and pepper.
  3. Stir into potato mix, knead lightly.
  4. Roll pastry between two pcs of clear plastic wrap to required size (base and cover) then remove plastic.
  5. Line pie plate and pour in desired, pre-cooked filling.
  6. Cover with remaining pastry, prick and glaze with lowfat milk.
  7. Bake at 200C (400F) for 20 - 30 min.
  8. Note: If using very moist filling, pre-cook pie shell for 15 min.
  9. (Mashed potato: potatoes must be steamed, and then mashed without adding any liquid or possibly butter during the mashing.)
  10. (I have only used this for savoury pies, so far.)
  11. Makes sufficient to line and cover 20cm (8") to 23cm (9") pie plate.
