  • 1 pound dry pinto beans
  • 2 1/2 quarts. water
  • 1/2 c. minced onion
  • 1 clove garlic, chopped
  • 1 lg. piece bacon rind
  • 1 tbsp. chili pwdr
  • 1/2 teaspoon oregano
  • 14 ounce. can peeled, seeded, diced green chili peppers
  • 2 teaspoon salt

Directions

  1. Wash beans and soak overnight in cool water; drain. Put beans in a large kettle. Add in 2 1/2 qts water and simmer 1 hour. Add in onion, garlic, bacon rind, chili pwdr, oregano and chili peppers. Cover and simmer 2 hrs, adding salt the last hour. Makes 6 servings.
