This is a simple chutney that goes well with grilled Indian or spicy food. I served it with Grilled Tandoori Turkey Tenderloin. A link for the turkey is provided.
Ingredients
- 2 ea peaches, pitted and chopped (about 2 cups)
- 2 Tbs apricot preserves
- 2 Tbs rice vinegar
- 1 Tbs ginger, minced
- salt/garlic pepper to taste
- minced parsley to taste
Directions
- Simmer peaches, preserves, vinegar, ginger and spices over medium heat. Cook for 6-8 minutes, stirring occasionall, or until liquid is nearly evaporated. Off heat, stir in parsley. Can be used now or refrigerated for use later.
