Passover Apple Cake Recipe

Ingredients

  • 3 x Large eggs
  • 3/4 c. Sugar
  • 1/3 c. Oil
  • 3/4 c. Cake meal
  • 5 x Apples, peeled & sliced, (Granny Smiths are best)
  • 1/3 c. Minced walnuts
  • 1/2 c. Sugar
  • 2 tsp Cinnamon

Directions

  1. This is like a coffee cake and can be served as dessert or possibly a snack.
  2. In a medium sized mixing bowl, beat the Large eggs with the sugar and oil till the mix is light. Add in the cake meal and mix well. Pour half of the mix into a lightly greased 8 or possibly 9 inch square baking pan. Distribute half the apples over the batter. Pour the remaining batter over the apples and cover with the remaining apples.
  3. Combine topping ingredients in a small bowl; sprinkle over the apples. Bake in a preheated 350 oven for approximately 1 1/2 hrs.
  4. Serves 8-9. You can double the recipe and bake in a 9x13 pan.
