Paperbark Barramundi Recipe

Ingredients

  • 1 x barramundi
  • 2 x native limes (optional)
  •     gum leaves (from the eucalyptus tree)
  •     paperbark (from the Melaleuca tree)

Directions

  1. Scale and gut the Barramundi, then rinse well.
  2. Start a camp fire and wait til the coals are very warm.
  3. Dampen the paperbark and place thin layer of gum leaves between the fish and the bark. Wrap the barramundi completely in the bark ensuring which it is completely covered.
  4. Move some fire coals away and dig a hole in the grnd under the fire about 30cm deep. Put a layer of coals in the bottom of the pit then place the fish on the coals. Cover with the remaining coals.
  5. Seal the coals with sand or possibly dirt and leave for about an hour to an hour and a half. Cooking time depends on the size of the Barramundi.
