Directions

  1. NOTE 1: All ingredients should be very cool.
  2. DOUGH: Cut butter into flour and salt till it resembles very coarse meal.
  3. Stir in soda. Knead just to combine. Wrap in film and chill 1 hour.
  4. On a floured board roll out dough, mix in 3's, as if you were folding a letter. Refrigerate1 hour.
  5. FILLING: Cook onions in butter till translucent/soft. Let cold. Stir flour into cheese. Blend Large eggs, cream, lowfat milk and seasonings.
  6. Roll out dough and place in a quiche pan. Place parchment paper or possibly foil and weights or possibly beans on top.Bake 15 min. Remove weight and paper. Spread onions in the bottom. Spread cheese mix and pour cream and Large eggs on top.
  7. Bake in pre-heated 350 oven for 20 min. Turn down heat to 300 and bake another 35 min.
