Ingredients
- 4 escalopes of veal (approx 120 grams each)
- flour
- 2 eggs, whisked together with a fork
- breadcrumbs (plain)
- nutmeg
- salt / pepper
- butter (substitute veg oil or lard)
- 1/2 lemon
- Melt 4-6 tablespoons butter in a frying pan. (approximately 325 degrees)

%3C/p%3E%3Cp%3EMy%20husband%20Ken%20and%20I%20have%20long%20enjoyed%20Munich%20as%20a%20place%20to%20relax,%20to%20eat%20good%20food%20and%20drink%20exceptionally%20good%20beer.%20This%20year%20after%20leaving%20Florence,%20thirsty%20for%20a%20tall%20Augustiner%20Edelstoff%20and%20wanting%20to%20show%20the%20kids%20the%20amazing%20Deutsches%20Museum,%20we%20spent%20several%20days%20in%20Munich.%20During%20the%20time%20there%20both%20kids%20discovered%20a%20love%20for%20Weiner%20Schnitzel.%3C/p%3E%3Cp%3ENamed%20for%20Wein%20(Vienna),%20this%20dish%20traditionally%20features%20veal%20and%20is%20fried%20using%20lard.%20I%E2%80%99m%20not%20a%20fan%20of%20using%20lard%20to%20cook%20with%20(okay,%20at%20Christmas%20when%20tamales%20are%20made%20in%20the%20Valley%20I%20don%E2%80%99t%20mind%20it%20so%20much%E2%80%A6)%20and%20thus%20used%20butter%20as%20the%20frying%20medium.%3C/p%3E%3Cp%3ESince%20this%20marks%20the%20last%20weekend%20of%20Oktoberfest%20in%20our%20beloved%20Munich,%20it%20seemed%20only%20appropriate%20to%20eat%20food%20from%20the%20homeland.%3C/p%3E%3Cp%3EThis%20was%20the%20first%20time%20I%20had%20prepared%20wiener%20schnitzel%20and%20found%20it%20to%20be%20much%20less%20labor%20intensive%20than%20I%20expected.%3C/p%3E%3Cp%3Eweiner%20schnitzel,%20garlic%20sausage,%20pomme%20frites,%20kraut,%20senf%3C/p%3E%3Cp%3ENotes:%20I%20used%20my%20electric%20frying%20pan%20to%20cook%20the%20schnitzel.%3C/p%3E%3Cp%3EI%20used%20veal%20which%20may%20or%20may%20not%20need%20to%20be%20tenderized%20(pounded).%3C/p%3E%3Cp%3EWhile%20veal%20is%20traditional,%20pork,%20thin%20round%20steaks%20or%20even%20poultry%20escalopes%20can%20be%20used.%3C/p%3E%3Cp%3ESome%20recipes%20specify%20that%20the%20frying%20fat%20(lard,%20oil%20or%20butter)%20should%20be%20deep%20enough%20to%20make%20the%20veal%20float.%20That%E2%80%99s%20not%20how%20it%20works%20in%20my%20kitchen.%20I%20used%20as%20little%20butter%20as%20I%20could%20manage%20and%20still%20have%20a%20nice%20golden%20brown%20coating%20for%20all%20of%20the%20pieces.%3C/p%3E%3Cp%3EThe%20basis%20for%20this%20version%20of%20the%20schnitzel%20comes%20from%20a%20general%20website%20about%20Vienna,%20there%20are%20a%20whole%20host%20of%20sites%20and%20recipes%20to%20choose%20from%20on%20the%20web.%3C/p%3E%3Cp%3EWiener%20Schnitzel%3C/p%3E%3Cp%3EIngredients%3C/p%3E%3Cp%3EDirections%3C/p%3E%3Cp%3ETenderize%20by%20pounding%20veal%20to%201/4%20inch%20thickness.%3C/p%3E%3Cp%3ESeason%20veal%20with%20salt%20and%20pepper,%20to%20taste.%3C/p%3E%3Cp%3EPrepare%20flour,%20eggs,%20and%20breadcrumbs%20in%20three%20separate%20bowls%20or%20deep%20dishes.%3C/p%3E%3Cp%3EAdd%20a%20dash%20or%20two%20of%20nutmeg%20to%20the%20flour%20and%20gently%20stir%20to%20mix.%3C/p%3E%3Cp%3EMelt%204-6%20tablespoons%20butter%20in%20a%20frying%20pan.%20(approximately%20325%20degrees)%3C/p%3E%3Cp%3EDredge%20veal%20in%20flour%20(shake%20off%20excess),%20then%20egg,%20then%20breadcrumbs.%3C/p%3E%3Cp%3EPlace%20veal%20into%20the%20hot%20butter%20(oil%20or%20lard)%20and%20cook%203-4%20minutes%20on%20each%20side%20until%20the%20breading%20becomes%20dark%20golden%20brown.%20Place%20schnitzel%20on%20serving%20platter%20and%20squeeze%20fresh%20lemon%20juice%20once%20around.%3C/p%3E%3Cp%3EServe%20with%20kraut,%20potatoes%20(fries,%20mashed%20or%20German%20potato%20salad),%20pretzels%20and%20other%20German%20delicacies.%3C/p%3E%3Cp%3E~Enjoy!%3C/p%3E){kind=link}
