Ingredients

  • 4 chicken breast halves, skinned & boned
  • 1/4 c. lemon juice
  • 2 tbsp. extra virgin olive oil or possibly other veg. oil
  • 2 tbsp. spicy mustard
  • 1/2 teaspoon oregano leaves
  • 1/4 teaspoon salt, optional
  • 4 med. onions, cut in halves
  • 1 green pepper, cut into 1" squares

Directions

  1. Cut chicken into 1 inch pcs. Combine lemon juice, oil, mustard, oregano and salt; add in chicken, stirring till well coated. Cover and chill at least 2 hrs.
  2. Arrange on skewers, alternating with onions and green pepper. Grill over warm coals or possibly broil 10-15 min, turning occasionally and brushing with marinade. Makes 4 servings.
