Ingredients

  • 1 1/2 lb grnd beef
  • 1 c. minced onion
  • 1/4 c. seasoned bread crumbs
  • 2 x Large eggs, lightly beaten
  • 3 tsp minced fresh parsley
  • 1 tsp Thick and Chunky Salsa
  • 1/2 tsp salt
  • 1 x 24 ounce. jar Thick and Chunky Salsa either mild, medium or possibly spicy - I use mild
  • 1 c. water
  • 1 x 6 ounce. can tomato paste
  • 2 clv garlic, finely minced
  • 1 x canned chipotle chili in Adobo sauce, finely minced

Directions

  1. Meatballs:Combine all ingredients in large bowl; mix well. Form mix into 18 meatballs and place in greased 9x13 inch pan.
  2. Sauce:Combine all ingredients in a large bowl. Pour over meatballs. Bake at 350 for 1 hour till meatballs are done.
  3. This can be frzn before baking. If doing which, thaw first and bake 90 min to ensure doneness.
